Much depends on the time of year, as the are can be terribly hot and humid and the outdoors insect-ridden.
We've enjoyed touring plantations along the Mississippi River north of New Orleans, and St. Francisville. We also enjoyed Lafayette and environs.
Check those out in a guidebook or on-line to see if they look interesting to you.

Will you have time to explore NOLA while you are at conference? If not, why not spend the time there, assuming you haven't been there before. Lots to see and do right there. We spent 4 days there in November and can't wait to go back!

You could do the plantation and swamp tours that are in the NOLA area. Oak Alley is the most famous plantation but there are others. Most are within an hour of NOLA.
Are you wanting to leave NOLA and stay somewhere else or just travel for the day? Natchez, MS is about 3 hours from NOLA and we loved all the plantation there. But I think you could get the same experience without driving that far.

Last time we went we stayed in Natchez, MS, Nice town and in the spring they open up some of the mansions and plantations some of which are not otherwise open. Garden tours as well, try and visit Natchez-Under-Hill although parking is tough there. We had not booked ahead and ended up in a two-star Days Inn so if you do decide to visit book ahead.

Rent a car and drive the southern part of La. Explore Avery island where they make Tabasco and overnight in Baton Rouge. Visit LSU campus circle bk toward NOLA and take a swamp tour on the way! We did this a few yrs ago and enjoyed the smaller towns and food! Also the D Day museum is a 1/2 day in the city if you haven't been there it's worthwhile
