A few questions about Kauai
 
First, what are the chances of the water cooperating at tunnels beach for snorkeling at the end of march, begining of may?

Second, I completed my pool and class scuba stuff at home, but I am planning to do the open water dives by referral there. Has anyone done this? What were your experiences? Where did you do your dives? Can you recommend a company that is part of the universal referral program for SSI?

Makua Beach (mistakenly called "Tunnels" by many tourists) should be fine by May -- our winter rains are mostly gone, although there may be an occasional passing shower.

Any of the dive companies can help you with open diving -- whether from somewhere on the north shore, or down Po`ipu side.
