5 Star - Cooking Schools in Napa or Upstate NY?

I am looking for high end cooking schools either in Napa Valley, CA or UpState New York ...that are associated with 5 star resorts....

Any suggestions? Have you been? What was your experience?

Well, there's a CIA (Culinary Institute of America) campus in Napa Valley (St. Helena). I may be wrong, but I believe that the CIA is the best cooking school in the US.

And a related CIA in Poughkeepsie (sp?)in the Hudson River Valley. Don't know if they do shorter courses and aren't 'related' to a resort, per se.

Ads in the back of Gourmet, BonAppetit, Saveur would be a good jumping-off point, I should think....

The CIA in Hyde Park (Poughkeepsie) is a culinary school geared for professional chef. Beautiful setting overlooking the Hudson River. They have 4 or 5 restaurants on campus (reservations highly recommended). It is not a resort.

What are you looking for? Do you want to take a short course on a resort/weekend stay or are you looking to matriculate in the full culinary arts program? The CIA offers the latter, but not the former.

I clicked on this link thinking it was about short courses (eg: weekend) for the cooking entheusiest (sp?). I'm looking for something like that in NY/New England as a gift.

Rb - I know that it is out of the required geography, but the Greenbrier in WV used to offer a high level cooking class.
Did you make it down to Wmsbg for Grand Illumination?
