5 nights Santa Fe Taos area itinerary sugestions/comments

5 nights Santa Fe Taos area itinerary sugestions/comments

We are planning to drive to Santa Fe from Kansas (overnight midway in Liberla or Dodge city). We want to spend 5 nights total in the Santa Fe/Taos area.
We should arrive in Santa Fe mid afternoon and plan on seeing the Plaza sights and maybe shopping that day. Day 2 I was thinking Bandelier. I'm not sure how many hours to plan on for this or, if we should return to Santa Fe that night. Day 3 travel the roads between Santa Fe and Taos to see the smaller town sights and a pueblo or two. Maybe stay that night in Chimayo? Next day's plan is to see Taos Pueblo, and stay in Taos that night. Should we spend our last day/night in Taos or should we plan on more time in Santa Fe? We don't want to rush around but want to do some light hiking to see the country and visit some historical sites and get a feel for the culture.
We are not big shoppers, dislike crowds, perfer Bed and Breakfasts and the restaurants frequented by locals. I am interested in weaving/rugs and architecture. My husband is into jujitsu and would love to catch a class somewhere during our trip.
I would love suggestions as to lodging and on our itinerary. I need to book rooms soon as we will be going in mid June.

La Posada de Taos for a B&B in Taos.

Not many chains in Taos, so most of what's around is "frequented by locals." Old Blinking Light is pretty good. We usually go to El Taoseno (south of town) too.

Tomasita's is a top lunch spot in Santa Fe - lines out the door when it opens. La Choza is solid. Andiamo is good too, but - as the name shows - it's not, er, regional to New Mexico. ;-)

Thank you for the B&B sugestion. I looks to be very close to the Plaza, great for walking. Is the area quiet at night? How is the nightlife in the city?
