3 days in Portland and drive back to Seattle

I'm planning a trip with 5 friends (adults) to Portland, OR for 4th July Weekend. We'll be driving from Seattle so will have our car in Portland.
I would love some suggestions on hotels & vegetarian places to eat out.
With following are on my radar, I would highly appreciate any help with itinerary - what to do when and other suggestions for nearby places to visit.

1. Intl Japanese Garden, Rose Garden and Chines Garden
2. Oregon Zoo
3. Powell's Books
4. Portland Art Museum
5. 23rd Ave Shopping District and the Pearl Dist.
6.Microbreweries or Distillery
7. Mount hood (Snow activities)
8. Multnomah Falls
9. Columbia River Gorge
10. Some beaches on 101 drive, while driving back to Seattle

Looks good, except I wonder which beaches you intend to visit while driving back to Seattle. Seattke is on I-5 not 101.

If you are planning to drive from Portland to Cannon Beach and then to Seattle, don't miss Ecola State Park just north of Cannon Beach. Then, return to Seattle via the Astoria Bridge, Raymond, and Olympia. (There is a recently remodeled McDonald's in Raymond which has a clean bathroom.)

The Columbia River Gorge and Mt. Hood can be done as a loop. When we show friends the Columbia River Gorge, we take I-84 to Corbett to access the Historic Columbia River Highway for Vista House and the waterfalls. After enjoying Maltnomah Falls, we return to I-84 and drive to Hood River--a delightful town to visit.

From Hood River, Mt. Hood is about at hour from drive on OR-35. On the way you will enjoy amazing views of the mountain. Return to Portland on OR-26.

Check the link and you will some lodging deals- usually include a breakfast, parking and some coupons for dining or shopping

Check out the Inn at Northrup Station for lodging- close to much dining and street car stop to downtown- with free passes I believe and free parking-

The Blues Festival will be going on that weekend with lots of great music. You could do a Blues Cruise- boat trip on the river with some good music.

Walk or bike the paved path along the waterfront-

Go to Saturday Market

We were there last July 4 and really enjoyed the Blues Festival as well as the Saturday Market. The Chinese gardens downtown are awesome, too. Check out the food trucks on (10th?) street for a huge variety of food options.

101 is quite out of the way; instead you might consider heading east from the Gorge, out to Maryhill (museum is cool) then north on US 97 to Yakima, then I-82 to I-90 and over Snoqualmie Pass back into Seattle. From Hood River the time (vs. I-5) is close to a wash; the scenery way better.
