20' Truck Move from Washington to Texas

I will be driving a 20' Uhaul truck from Longview, Washington to Salado, Texas the end of April/May 2016. What is the best route to take that avoids high mountain passes? I have no time restrictions, just looking for the safest route.

The high mountain pass is on I-80 between Laramie and Cheyenne. There is a nice rest area at the top of the pass.
Take the time to see the bust of Abe Lincoln in the rest area which serves both westbound and eastbound travelers.
Spend nights in or near Boise ID, Laramie WY, Pueblo CO and Amarillo TX. You'll have a long day (day 5) getting from Amarillo to Salado.
At least you're moving to Salado instead of Ding Dong.
I hope you're not towing a car behind the UHaul.

Military move from Fort Lewis to Fort Hood?
Cut day 2 back to Rawlins instead of Laramie.
Day one could be extended as far as Twin Falls ID if you get an early start.
I can't imagine moving on a whim from the beautiful PNW to Salado TX.

No military move. Helping out a retired friend. From looking at the maps last night, it appears that it will be a 4-5 day road trip. I'm trying to avoid as many mountains, inclines and passes as possible.

Yes, Salado is definitely not as scenic as PNW.

Yes 5 full days. You will not have any problem with Sherman Pass if you are not overloaded and have good brakes for the descent into Cheyenne.
Longview - Boise 8.0 hr - 474 miles
Boise - Rawlins 9.2 hr - 588 miles
Rawlins - Pueblo 5.6 hr - 355 miles
Pueblo-Plainview 6.4 hr - 397 miles
Plainview-Salado 6.8 hr - 417 miles
If you wanted to make day 2 shorter, extend day 1 to Mountain Home or Twin Falls ID.
Are you flying back home from Texas?

If you gear down you will not have to worry about your brakes. Makes a lot of noise but does not hurt the engine. If I (or my wife) hits the brakes more than twice on a downslope we shift to second immediately.

Do look at reviews of different truck rentals, and when you pick it up, really test the brakes and gears. Do a few miles on a highway and try a couple of hills.

We rented trucks from two companies that were just fine.

We rented one from another company that the brakes started failing almost immediately and we returned it, thankfully before we loaded it.

Another, the brakes were so poor, we had to go super slow about two hours into the trip, doubling the time it should have taken, but we were too far along to turn back.
