Mexico/Central America are good choices. Also, consider Guatemala. The tourist attractions in Guatemala range from picturesque Mayan ruins and steaming volcanoes, to lush jungles and undercrowded beaches. Consider Belize too. beaches there are amazing, great diving jungle hikes, and so much more

If you didn't want to leave the USA, get to Chicago and ride the "City of New Orleans" (Amtrak) to the Big Easy.
Fly back to Chicago when the weather is good if you don't like the train.
You could also make a 24 hour stop in Memphis to see the attractions there.

I love Puerto Vallarta Mexico. It's (of course) more expensive during the holiday weeks, but depending on what you have to pay for airfare could work. It's lovely there that time of year, perfect weather, festive, fun.
