As long a flight as possible. Seriously. DH and I were in your shoes 7 years ago, and now with two young kids we still travel but have yet to schedule a flight longer than six hours. Even when we've traveled without kids we don't go too far away, because why would I want our five days of vacation eaten up by a day of travel on each end? Some places we've either been or wish we'd traveled BK (before kids):
Tanzania / Kenya
India / Sri Lanka
Peru / Bolivia (should be noted though that we could have done this while the kids stayed at home with grandma - the flight from most US airports is not too long)

China
Bali
Botswana
Namibia
