Try Belize if you like adventure and want a cultural experience too. All ranges of accomodations and you can feel free to immerse yourself among the locals and not be stuck at the resort. Placencia is my favorite village. Right on the caribbean and enough tourist activity to support some restaurants, taverns and gift shops but still be a local village. I have met many wonderful people in my visits there. If you want some ideas on private romantic places to stay, let me know.
