independent guides

Where can I find a comprehensive list of independent tour guides, to include South America and Africa? I want to hire for 1-2 days in each destination I go to, a guide that can show me around the city, or take me and my partner hiking safely, or on wildlife excursions etc. I do not want a full guided trip, so want to be able to pick and chose the time and place I have guidance.
Is this possible and where can I find them from?
