Looking for unique things to do in/near Las Vegas

I've been to Las Vegas numerous times before and I feel like I've done all the "tourist-y" and usual Vegas things to do. So, this time I'm looking for a few suggestions for something different for me to do solo while my husband attends his conference during the day. I love photography, so scenery would be great (already planning one day at Red Rock and Valley of Fire). I'm also interested in any worthwhile museums, tours, or excursions. Or, on the other hand, even a day spa could interest me I'm just looking for something other than a typical gamble-walk-eat-type trip this time!

I've known about the Ethel M. Chocolate factory for a long time and if I'm ever forced to return to LV I plan to see their cactus garden. Cactus can be great photo subjects:

The Springs Preserve is a great place to visit and they often have interesting demonstrations to attend. The lunch café is terrific. It would make for a nice day going solo and taking photos/leisurely lunch etc....but most of it is outdoors so it depends on the heat.

There's the Cleveland Clinic "Brain" building, strange architecture and a great photo-op, I wonder if they have tours?

Something on my list for next time in Vegas is the Mob Museum.

I second all the suggestions above. If you decide to do the mob museum make sure it's the one downtown and it takes a good 2 hours if not more. Also, downtown is The Las Vegas Nature Museum it has a fantastic display of Egypt. All the great stuff that used to be at the Luxor hotel is now here.

We liked Springs Preserve, too.
The Atomic testing Museum was interesting.
There's a history museum we liked in Henderson.
Have you been to Hoover Dam and Lake Mead?

The Neon Museum is another possibility: www.neonmuseum.org
It should yield some intriguing photographs.
