Amsterdam Recommendations; hotel, tourist info and restaurants
We will be spending 3 nights in Amsterdam next October.
Please comment on our hotel options. We would like a unique hotel, with character in a good location.
We're considering the following hotels:
1) The Nobleman
2) Hotel Estherea
3) The INK hotel
4) The Kimpton De Witt
We would also appreciate your ideas about things to do and where to eat.

Whist you have kindly given us a list of hotels you have not said why they take your fancy. Nothing about facilities that you are looking for. In the absence of that info. have you read the reviews on Booking?
There a million guides online to find the tourist attractions and places to eat. You have also not given us a clue as to what your likes and dislikes are. what time of year would have been helpful to add.

We stayed in Hotel Estheria in 2017. It was lovely. A great location right on a canal where we could walk easily around the central city. We happened to be there during Kings Day, which was quite the raucous event. All the streets were closed and we had a great vantage point from which to watch all the action on the canals. The hotel also has a lovely bar/lounge area. They also arranged a taxi to the airport for us- the cost was included on our hotel bill, which made it very easy. I would go back there were I to return to Amsterdam, which I certainly hope to do.

The Nobleman and Hotel Estherea are further away from Centraal Station, which imo is a plus. They are also on or very near a canal, which has nice ambiance for strolling. The INK is very much in the thick of things, which might be your thing but is less so mine.
This is a list of cafes we've liked in the past. We tend to like the Western/Jordaan area as its quieter/more residential and places further from the Station, as said before.

Cafe de Tuin - cafe in Jordaan
De Twee Zwanntjes - cafe in Jordaan (close to Anne Frank house)
Proeflokaal Arendsnest - bar in Grachtengorrden West
Always wanted to try de Sluyswacht for biterballen and fries - behind the Nieuwmarkt

Dutch friends who live near us in the USA, always stay at the Hotel Estherea when they return to Amsterdam. We will try it next time. We have enjoyed staying at l’Ambassade on the Herengracht Canal.
