Places to stay in beaune

I will be in the beaune area in late June. Any suggestions of places to stay and/or eat and visit? We should be there on a tues and weds. We have 2 days in this area, maybe 3 and then on to paris. I will be with my very active 70 year old mom!! We tend to enjoy authentic and interesting over plush and redundant!
I appreciate any input.
I should mention we are using public transport. Unless it is recommended that we rent a car.

Last spring I stayed in the Hostellerie de Bretonnière, just outside the city walls in Beaune. I stayed in a newer part first then moved to the older part, less expensive, which I actually preferred to the newer wing. The location is good, walking distance to everything of note except the train station, a bit further out. I liked the place and the staff and it's less expensive than other places I investigated. I arrived on the train and took a taxi to the hotel, not far but better than walking with luggage.

We ate at La Ciboulette on Rue Lorraine and enjoyed it quite a bit. It wasn't fussy. The decor was simple, kind of country chintzy which isn't my thing, but the service and attitude were delightful and the food was excellent. It was very reasonably priced as well.

We stayed at the Hotel de la Paix which is just outside the center. It was fine but nothing special. Again, nice service.

We enjoyed Hotel de la Paix - - easy walk into the center, boulangerie across the street... ate a dinner at the Brasserie le Belena. AVIS car rental is in walking distance from the hotel; the train station is walkable but a little further than I cared for.

Last May we rented from Franck and Laura and their place was fantastic. They have an apartment in Beaune and a small home. Highly recommend!
