Not the Usual Towns near Munich

depends on what you think is "off the beaten"...but if you want to see the most elegant Ludwig palace of all, then take the train the Prien and then the ferry over to Herrenchiemsee..an easy day trip from Munich. More elaborately appointed than Neuschwanstein and more like a miniature Versailles than Linderhof.
However, this detsination is extremely popular with GERMAN "tourists" so for them it isn't so far off that beaten path.
As an alternative within Munich itself I would take in the Residenze...the carriage collection alone is worth a visit...or the Nymphenberg Palace.

By train or by car? You didn't mention, so I'll suggest a few of my favorites without regard to how to get there. All are within less than a 2 hour drive from Munich.
-Tegernsee, all around the lake, but somewhat touristy.
-Walchensee, less touristy.
-Weilheim on the Starnberger See.
-Herrenchiemsee, already mentioned.
-Konigsee, the most beautiful lake and mountain scenery in Germany, but right at the extreme of a 2 hour drive.
-Augsberg, Landsberg, Ottobeuren.
But for even lesser known places, consider the following:
-Benediktbeuren, not far south.
-Bad Tolz, even closer south.
-Wasserburg, not far to the east.
-Freising, close to the north.
-Schongau, Rottenbuch, and Steingaden to the southwest.
All of this group are pretty villages with plenty of charm, and are not as heavily visited as some of the other places. Good luck.
