I think the largest selection of AI resorts is over on the Mayan Riviera side of Mexico. Around Cancun and the Playa del Carmen area.

There are SO VERY MANY resorts that we need to know what you're looking for.
Do you want adults only? Are you interested in a good beach or is the pool more important? Do you want lots of activities? Do you need a nightlife at the resort ie: shows, disco, etc. Do you want a large resort or smaller????????

Here is a list of AI resorts in Mexico. It is quite overwhelming. We need to know more specific information as to what you are looking for in an AI and your budget to make any kind of recommendations.

Do you care if it's in Mexico? Or other countries in Central America?

"Affordable" means different things for different people. What is your budget?
Mexico does have a great selection of AI resorts. The Riviera Maya area is wonderful.
Great beaches are in the Maroma area and Playacar. If you go further south, Akumal and Tulum also have good beaches.
