Puerto Vallarta
Hey all!
Any recommendations on places to stay (less than $200 a night) in Puerto Vallarta? My husband and I are looking to go 1/17-1/21.
Any help is greatly appreciated!

Where do you wish to stay in the city? Are you looking for A/I, or a more independent place. You can find any kind of place you want. On the beach, in the outskirts or in the hills.
I stay at the second oldest hotel in PV high in the hills on Matamoras. Fab views from the roof top lounge, a most excellent restaurant at this very quaint 14 room place with no phones, TV or AC but possibly the coldest deepest pool in Mexico. Most definitely for the independent traveler.
I ave been staying here off and on since 1986 so it is like a second home to me.

I’ve stayed at the Marriott, Fiesta Americana and Barcelo and liked all of them. I’m guessing they would fit your budget. They’re all in good locations. Marriott and Fiesta are in the hotel zone, With Barcelo a few miles south of town in Mismaloya. Barcelo and Fiesta are AI, Marriott is not.

You question is very broad. It's hard to answer (and I love PV!)
If you look at the maps here you can better understand the way the city is laid out and the different zones:

All Inclusive is more a personal preference and style choice. They come in all price ranges from budget friendly to very high end. Do you want modern, contemporary, traditional-Mexican?
Actually the Hotel Zone is not the most convenient location if you are talking about walking distance to Centro (downtown) and Zona Romantica (old town/southside) where the popular restaurants, bars, shops, galleries, activities, attractions are located.
With dates coming up so soon, I'd just get on one of the general reservation websites and put in the dates and see what all pops up in your price range.
To name a few favorites:
Marina: Casa Magna Marriott, Westin
Hotel Zone: Sunset Plaza, Secrets/Now Amber, Sheraton
Centro: Hotel Rosita, Los Cuatro Vientos
Zona Romantica: The Tropiana or Playa Los Arcos

I just took a quick search for hotels for your dates and it seems to be a relatively pricey time to go. I just went last summer and the prices were significantly lower. I also booked for this coming Easter week and even for then the hotel prices were lower than what I am seeing for the week you're going.
That being said, I did see a room with balcony at the Sheraton Bouganvilla for $169. While not right downtown, it is quite close to the Malecon - either a long walk or a very short taxi ride. And it has the benefit of being a resort with a nice pool and right on the ocean.

The Barcelo (a few miles south of town) is AI and so is the Fiesta Americana. The Marriott is not but I think has an AI option. As for whether the AI is worth it, that’s up to you. I guess that would depend on the price and how much you drink. That said, PV has great restaurants at very reasonable prices. Even if you stay at an AI, you’ll want to go for dinner away from the hotel. Also, it’s easy to get downtown from the hotels I mentioned by bus or taxi.
