Weather in Belize in Dec???
 
We're planning a trip to Belize in Dec. What's the weather like? Any recommendations on places to eat in Ambergris Caye? Thanks for taking the time to respond!

i went two years ago the last week in december...beautiful weather. we satyed in ambergris, but cant remember where all we ate. sorry. have a great time!

Here's a few suggestions for memorable meals in Ambergris Caye: <BR> <BR>Elvi's Kitchen in San Pedro -- while it's in a building (painted marigold, yellow and iris), part of it has a thatched roof and the floor is sand, so its very funky and casual. This is local food at its finest -- fresh seafood with a Mayan island flair. Try the red snapper cooked with veggies in a plantain leaf. <BR> <BR>Island Cuisine -- just outside of the gate of Ramon's Village. It doesn't look like much, but has a rustic/romantic ambiance (and as with all other places, you don't have to bother with shoes). Stone crabs, shrimp and grilled pork are all wonderful. <BR> <BR>Last but not least, look into taking one of the excursions which features lunch on a barrier reef beach. We went with Excalibur, and our guide cooked us an awesome red snapper meal over a coconut husk fire. Truly one of the best meals I've had in all of the islands.

We were there 2 or 3 years ago. We also liked Elvi's. There was also an Italian restaurant (Maryellen's or something like that - it had the name Mary in it, I believe) that we really enjoyed. We ate there a couple of times.

Cassie: I don't mean to spoil your fun and we're going to Belize in January so I'm very interested in all the suggestions here, but do be aware of all the damage done on Ambergris by the recent hurricane. The resort where we are reserved doesn't expect to be open until at earliest December. I wonder how other resorts and restaurants are progressing with the rebuild? Has anyone been to Ambergris since the storm? Are all those great sounding restaurants still standing?

For updates on how restaurants and hotels fared, visit the message board at www.ambergriscaye.com. There seems to be a lot of up-to-date information, and you can certainly post a query if your concerns are not addressed. The general sense I got is that things are up and running, though not fully in the condition they were in pre-hurricane. You can expect to hear some construction noise as well (my husband and I went after Mitch, and the noise of re-building docks was omnipresent -- it didn't bother us, but it may be a concern to others).
