Sunday is a traditional day of rest for the island people on Cozumel. If there are ships in port, shops will be open. If no ships, then the locals will be at the beach or otherwise enjoying a day with their family. There are always some shops open, and Sunday is a great day to see how locals live. But if you're going strickly to shop, it might not be the best.
