Single woman beach vacation - Roatan?

I’m a woman in her 40s who refuses to go to another all-inclusive in Mexico with my friends on their annual trip. Favorite tropical vacations so far were to Belize and Costa Rica (not solo travel). I want beach, relaxation, snorkeling, kayaking, local cuisine and shopping, safe location, and an affordable room (under 120/nt if possible). I’m confident traveling alone in the US but a little more cautious internationally.
Is Roatan a good choice and what town/hotel would you recommend? I’m also open to other C American or Caribbean locations.
Help me find my Feb destination to escape the Midwest cold!

Roatán is a good choice and so is Belize. You won't find the snorkeling from shore most places in Belize that Roatán is famous for, but there are lots of beachy options and awesome mainland activities, too. Here’s a link from an old forum thread I like with good descriptions of beachy options in Belize:

I'd pick between Roatán or Belize, and then kick into research mode. If you don't have one already, in my opinion you should get your hands on a guidebook and devour it, even an older 1 from your local library would work. They have good historical and cultural background sections and suggested itineraries in addition to travel, tour, food, and lodging specifics. When you have a better idea of what you’re wanting, you can get more updated info from the internet and come back with more specific questions so we can help you better.

In the mean time here's a link to my photos with blog, travelogue, and review links on the main page of each collection - all my recommendations are embedded there. Happy planning!

You could go to Mexico and not do an all-inclusive resort vacation :-) Twice a year I go to Puerto Vallarta (rent an apartment, not at a resort) and it offers what you asked for. Truly not trying to talk you into it, just pointing out you don't have to discount an entire country because of how your friends choose to vaca -lol!

For INEXPENSIVE shore snorkeling, I don't think you will beat Roatan as a new destination.
Grand Cayman is also good, but expensive.
