Maybe late to the game, but there's some nice hiking on offer in the Carambola Reserve and flyfishing, both guided and unguided is a favorite activity of my husband's. There's deep sea fishing, too, as of my last visit a small submarine if you're brave enough to try it, beach sitting, good food, people watching, some interesting smaller communities, a bit of shopping, water sports like wind surfing and stand up paddle boarding, at least one zipline, and a few other cater-to-tourist destinations. 8 years ago friends and I took tin drum lessons from a woman who has taught and organized local kids to help and to perform which was really enjoyed. And snorkeling (especially nice it's available from shore in many areas around the island) and diving.Maybe too dated to be helpful at this point, but my photos with blog links on the main page of each collection are below in case you're interested - the Roatán trips are in the 2006, 2011, and 2014 collections.
