I'm a little late to this, but I wouldn't have mentioned Las Palapas as being close to a 4-5* hotel myself.

I like Mosquito Blue. I don't know what its Mexican official rating is, but I think it would be 4* or so. It was very nice, I loved it. It's not on the beach, but there aren't any really great hotels on the beach IMO, it's about a block off 5th avenue so if you get the right room, it's not too noisy (I requested something quiet, on the top floor). The AC worked fine, as I recall.
