Papagayo, Catalina or Tamarindo
 

I am planning a trip back to Costa Rica in January. I have been all over the country except the Guanacaste area. This time I would like to stay on the Papagayo Penninsula, Catalina or Tamarindo on the NW coast. I am into birding and nature, and like to stay in really nice hotels that are surrounded by bird life. The perfect hotel is one that I can relax/be pampered after a long day of birding and watch even more birds and nature from my balcony or the hotel grounds. Does anyone have suggestions for this area? Also I am not a huge fan of lots of stairs as I have a bad knee. As always, I appreciate your suggestions!
