Mexico Water Question

I have condo in town (PDC) and spend about 3 months a year there. I've been fortunate never to have been sick at any of the restaurants that I've eaten in and I eat all over. I would be more wary of the food sitting out at the AI's than something that was cooked right in front of me. Just make sure that it's fully cooked, peel your fruit, drink bottled water.

I usually start off being very careful (so as not to ruin my trip) and then realx a bit toward the end because I am fine with being sick at home.
For the first 2 or 3 days, no salad, no unpeeled fruit, no uncooked vegetable. No salsa. Then I lighten up, figuring that I have most likely ingested enough foreign germs to get my system acclimated.
Only bottled water, though, for the whole trip. This includes brushing teeth and rinsing the toothbrush.
However, the ice is fine.
Except for a brief and unremarkable bout of turista maybe 5 years ago, I have never been sick in Mexico.
