Luxury hotel off the beaten path?
 
My husband and I are looking for a boutique resort in the Caribbean or Central America where we can leave our kids behind and celebrate my 40th birthday. We are looking for something that is luxurious, but not pretentious. (Doesn't necessarily need to be fancy) Someplace Relaxed, but that still offers excellent service. Quiet would be great- we want to be able to eat well and drink well, but aren't looking to stay up late partying. Adults only would be a huge bonus! A resort off the beaten path would be wonderful. We are willing to fly someplace and then travel to get to the hotel.

We found such a place outside of Todos Santos, Mexico (Rancho Pescadero) and our stay there was amazing!! We would return there, but We have relocated to he east coast and are looking for that same kind of resort in a different part of the world!

The resorts (as opposed to lodges) that come to mind from personal experience include the Rio Celeste Hideaway and Ylang Ylang Beach Resort, and maybe also Rio Perdido, all in Costa Rica.

If you include jungle lodges then there are many additional options.
