Language barrier in Carabbean and Laten America?

I originally planned to focus on a family trip to Dominica. Some recommendations to a few posts I made have got me intrigued by Costa Rica, Belize and Panama. I speak English and there is little prospect of me learning otherwise. What are the facts about these places and my language problem?

Belize used to be British Honduras, and English is the official language, although most people also speak Spanish. My Spanish is very limited, but I never had any trouble in either Costa Rica or Panama. I wouldn't let language be the deciding factor.
