Hotel Esturion in Iguazu ( ARG) is a good second choice if no place at the Sheraton:

I stayed at the Sheraton this past January and I the rate was $145 for a garden view ( $50 extra for the falls view). Try to reach Cintia at www.wowargentina.ar.com. She was very helpful in making the arrangements.

You absolutely must go to Iguazu! We made a point of making the extra trip there while touring Brazil. Go on the boat ride...so fun & amazing views. Make sure you leave the windows closed where ever you stay (we were happy at the Sheraton & you can't beat the convenience & views). We returned from dinner to a room infested with the craziest bugs ever! It was like that commercial. Try to find out about an authentic Argentinian dinner show not far from the falls/Sheraton. It was a great show as well as a feast! I think we only spent a little more than 24 hours in Iguazu due to time retraints but it was definitely one of the highlights.

Yes, definitely go to the falls. I couldn't afford the Sheraton but really enjoyed the Hotel St. George in town. nice clean rooms at a very reasonable price. It also has a great pool and is located very close to the bus station for an easy trip into the park.

Just to add my 2c, GO! It is worth it, even for a short time. 2.5 days in Salta will probably be enough - I have not been there, but other areas of Argentina/Chile for wineries. Seen one, you've seen them all. You will never see anything like Iguazu.
Also, definitely do the boat tour. SOOOOO much fun. BRING A ZIPLOC for your camera. Nothing else will protect it. You will not be "misted" by the falls - you will be drenched! Do not take that in a bad way - it is just awesome.
