Great thread!! I'm thrilled to be proven wrong (although even with these prices being quoted I still think you need a little more than the $1400, as mentioned by RAC directly above for transportation, activities not covered by the resort price, etc.

OK for ATVs and ziplining, look at Xplor south of Playa del Carmen, their site is not working 100% right now so I could not check pricing, but a sister park, Xel-Ha (mainly snorkeling but has a zipline) is about $70-75pp all inclusive so imagine Xplor is similar, I do know they include a lunch buffet there.
Jet skis are a waste of time, and cost a lot of money, like think $60 on up for 30-45 minutes average. NOTE Jetskis are not everywhere in the Riviera Maya due to the reefs and coral in some areas.
Also do not forget tipping, the hotel might be AI but you need to tip, folks make $6-10 per DAY. I stayed AI once, but I tipped the maid 50 pesos per day, for drinks I tipped 20 pesos every other round, for breakfast and lunch buffet I tipped 50 pesos (they only get your drinks and clear dishes) for a la carte dinners 100 pesos.
If you take a private transfer, I tipped 50 pesos to the greeter at the airport who loads your bags and 100-150 pesos to the driver each way.
This stuff all adds up, so you probably have to revisit your budget.

For snorkeling, no reason to blow a bunch of money on Xel-Ha--Yal-Ku is about $15 and Akumal beach is free.

For one-stop adventures, check out Hidden World Cenote--you can zipline into an underwater cave there I think.

I thought Hidden Worlds was still closed, although I have read you can get into the cenote there someplace.
You are right about the other cheaper snorkeling options though.

If they stay ay an AI in Cancun or on the coast south, any guided/bus trip (to ruins, adventure parks like Xplor, etc) is going to run an extra about U$100 per day per person, so figure that into the costs.
