First time Costa Rica visit Lotsa Questions!

Once again relying on all of your great suggestions and experiences! Thx in advance!
Going to CR for 5 to 7 days during Thksg.( husband and )I, adult sons may join us for a few days. We prefer hiking, fishing, natural settings to anything touristy. Looking forward to seeing wildlife, cloud/rain forest, etc. Sons may want to surf when they arrive. will be flying into SJO unless there is a better option. Plan on renting a car for the week. Probably a good idea to book rooms in advance, right? Trying to keep costs down.....
Anything/places to absolutely avoid?? Thanks.

Maybe Sarapiqui/Tortuguero/Caribbean coast.

Great wildlife, rainforest, beach, and all doable as one contiguous loop.

Sarapiqui area is only about 2-2.5 hours from San Jose.
