Looking to travel late December, single Mom and 2 daughters (15 & 20). Looking for suggestions for the best outfitters/companies to join an organized trip.

Not really sure what you are looking for.
An organized, hosted tour? Try Overseas Adventure Travel or Caravan.

Probably not looking for an outfitter who provides tents, boots, and pith helmets.

You might first find out what you want to see, what you want to do, and where you want to go within Costa Rica, and then figure out the best way (AI, tour, DIY, etc.) to accomplish it.

P.S., DIY is good for almost everyone.

Sorry do not know what DIY is.
I am looking for a company that does the whole thing, except air. easy to moderate adventure. water (rafting, kayaking, beach) nature. Any suggestions?

DIY is Do it yourself.
OAT does what you are now describing, and there is a review of such a trip
below in the trip report section.

You can also look at Anywhere Costa Rica, Costa Rica Expeditions and GAP, all highly recommended. Caravan is also highly recommended.
