What do you enjoy? There is a nice cooking school in a hacienda in Tlaxcala, close to Mexico City. Also a good cooking school in Puebla, a wonderful colonial town 2 hr ist class bus ride from Mexico City. There you can visit Cholula on market day also, and there are some nice spas to visit in Puebla also.

I enjoy Puerto Vallarta, La Paz, and Cabo San Lucas. While they are beach resorts, each has a lot more to them than that.

Guadalajara, Morelia, Patzcuaro or many other Colonial Mexican Cities.

We stayed in Acapulco. I heard horror stories of this and that. But is was great. The Fairmont outside the core is beautiful. We golfed, ate at fabulous restaurants in the city (cabbed it)and swam. There were excursions but we didn't go on any. We met some fabulous people.
