Where to visit in Europe before Africa?
We are going on safari next August and want to spend about a week (first week of August) somewhere in Europe that is easy to get to from London and won't have extremely hot weather. We would have visited London as our flight goes to Johannesburg via London, however the Olympics are on then. We have already been to Rome and Vienna.

What about Amsterdam or Paris or Scotland

Stockholm Helsinki and/or Copenhagen, Belgium (Brussels, Bruges, Ghent etc), Baltic capitals.

Ireland, Baltic coast of Germany or Poland, Frisian islands of the Netherlands, Swiss Alps, Italian Alps, Pyrenees, Tatra Mountains of Slovakia.....

Visit Scotland or Paris. Both are easy to get to from London and it will be easy to return to London for your flight to Africa. If you haven't been to Paris, that is a great option.

We did Amsterdam for 3 days on our last trip to Africa and just loved the contrast. It was in November, so chilly, but still tremendously enjoyable.

Paris can be unpleasant in August, hot and humid. Also all the Parisians are on vacancies, you will only meet tourists ;). Even many restaurants are closed in August. I would recommend Berlin combined with the Baltic coast of Germany.
