Where to spend this July

We are going to Europe in early May and will be there all summer. We are fortunate that we can work via the internet and we have family in France so we like to go for long stretches. We actually rarely go during the peak summer season, so I thought I would reach out to you all for suggestions on where to go in July.

We will be staying at a family home on the Atlantic near La Rochelle in May and June and we will have a car. Since we have that time at the beach, we are thinking of staying away from coastal areas during July since I am sure most all of them will be very crowded. We need to be at the Calais ferry the last week of July because we our going to be kitty sitting for friends in the Cotswold area. So we will have 25 days to plan for as long as we end up in Calais

We love good food and just hanging out in nice mid-size towns more than a rural vacation. We like large cities too but that can be challenging when you have a car. Not huge museum goers. The only real constraints are to be able to drive there and stay someplace with reliable internet connections. We have also thought of making it an all "UK" time, maybe explore Wales for example, since we are going there in late July, but I might leave that option open depending on the weather.

Any places that come to mind where July would be especially fun? We thought of the Nordic areas, but they may be a bit price prohibitive. This is sort of challenging for us since our instincts always take us south to Italy or Spain, but this seems like a perfect time to explore interesting places more East and North! All ideas would be greatly appreciated. We don't really have a preference if we stay in one place or do more of a "road trip", as long as it isn't just constant driving.
