Like you, we have recently started traveling abroad. We were in London last March and while the exchange rate certainly didn't help us, we spent much less that we had anticipated. We got a great deal on flights (around $350 RT from San Francisco), a nice hotel in Mayfair through priceline, and discounts on entry fees and theater tickets. We had a great time, were able to do a bunch of things, and ate very well. Only issue was that it was pretty cold in March.
Another option: we just returned from Barcelona and found Spain to be a great bargain that we weren't expecting. A yummy dinner of tapas and sangria was $30. Our hotel was beautiful, public transportation was cheap and easy, and the shopping was great (just in case you decide to do a little shopping). Great people, wonderful sites...I loved it!
