Since you are arriving on a Sunday, after you check in I would suggest going to the Luxembourg Gardens to just hang out, get some sun (helps your body adjust to the jet lag) and so on.

Hang around the fountain and watch the children and young lovers and just let the world go by.

One of my co-workers insists on taking off his shoes and socks and wiggling his toes in the grass of wherever he goes as an anti-jet lag event. I've never tried it, but, who knows?

I love animals, (all flora and fauna) so on a Sunday,

Marchés aux oiseaux
These bird-markets are located pretty close to each other:
Place Louis Lépine, Ile de la Cité
next to the flower market, Sunday from 9.00 am to 7.00 pm.
Quai de la Mégisserie (Seine Banks), is made of a series of pets shops open every day.
Monday is a perfect day to have a picnic at one of the beautiful parcs or by the Seine.

You might go to the Marais on Sunday. Some of the shops are open in the morning. You can go to the Musee Carnavalet, stop at the boulangerie, Au Levain du Marais, and sit on a bench in Place des Vosges.

My favorite Sunday in Paris is to go to Notre Dame for the early service. I think it was 8 or 8:30. This is before the tourist come and it is a moveable service. I then head over to the Edgar Quinet artist market and have found 2 of my favorite artists there. And you have to stop by the Hat Lady, Sylvie LaRoche. She is amazing. There are many creperies in this area and we have breakfast. The cemetary is right there and it is very interesting. Last year we went on to the Montparnasse tower and the views were amazing. It can be windy and cold, but if you happen to be there when it is sunny, you can get wonderful pictures. I don't know if it will be open in October, but the Cirque d'Hiver is another fun Sunday visit.
