Hello bodhijack, me again. I have not been to those places but I do have photos that my male friends in Italy have emailed me when they have visited there (and they love their vacations there). And per their photographs I would say your choice are good (swimsuit by or in the water), long shorts at cafes etc. At least that is what my Italians have on in the various photos that I have received from them. Sounds like you are going to have a fun summer trip!

BTW, these Italian fellows are all either businessmen, employees of big corporations etc and are in their 30's to say mid 60's.

Swimsuits for the beach and water yes - for walking about in town, no (if unless you have a fabulous well built body, and even then maybe cargo shorts) And definitely no for going into churches.

Long shorts/dockers are fine throughout the day - things can be quite casual. After five years I'm down to two dress shirts (just for variety) and five casual shirts - a couple draw string pants and two casual dress pants. I do bring a sweater because in September it starts getting cool at night in the islands (and even in Dubrovnik).

Hope this helps....
