I say $800 or under is good for May. Nothing is outrageous - if you book last minute on specific date on specific flight that's basically full, you'll need to pay full fare for like $2,000.
In fact, right now, a ~$760 fare is bookable on Aer Lingus.

I would say anything under $750 is good (we can find similar fares departing from Minneapolis) and I wouldn't spend more than that... keep checking and you should find a good fare.

Lots of variables - and deciding not to spend over 750 or anything else could leave you shut out.
When searching fares, be sure to compare not only airlines, but variance between, say, May 25 and 26, or Monday and Tuesday. A little extra work can turn up one or two low priced seats on a given day, just because that rate hasn't sold out yet.
It can be a pain, a game, or a little of both!

Back in Feb of this year I saw a posting here for NYC to Italy. It was on Eurofly and it was something like $250.00 total r/t and included May dates. Now this was obviously some kind of special sale, but it's not to say that it was a one time thing. In the last two years I routinely watch fares for places I'm interested in- Italy being one of them. I start watching before X-mas and continue from there. I have noticed pretty good fares around late Jan/Feb. Not to say that will always happen- I would just watch the fares for a while and when you feel in your heart that it's the right one, then jump on it. Others say to not look back, but I always do!
