Brains are mild in smell and taste. In any case, they are not chewy. It sounds like tripe, which can have a very distinctive odor, is white, curls up and is very chewy. If not properly prepared, it can taste awful, and it is very difficult to find good tripe. It is rarely served as an <i>amuse bouche</i>, although I had it served like that in Bordeaux and it was absolutely delicious. Even my wife, who will skip to the end of the menu when seeing <i>andouille</i> or <i>andouillette</i> liked that version,.

Another guess: could it have been calamari? That gets to be like rubber if it is over cooked.

But calamari is never white like my original suggestion. Calamari is rubbery only when over-cooked.

It really sounds like tripe to me. It was on an Irish celebrity cooking show recently and one of the guests from Cork cooked Drisheen (Cork style blood pudding)and Tripe cooked in milk or cream. Its supposed to be the traditional way to cook it...Just puts me off my breakfast now! My dad loves it though.
