What days are shops closed in Parma, Modina, Bologna, and Venice?

Sundays and holidays. Should be open other days from around 9-1, 3 or 4 - 7 or 8, though some shops are closed on Monday mornings and/or Satursay afternoons.
On Sundays, you find some supermarkets open (shorter hours), department stores and souvenir shops.

You really are going to dig around and do some research. Most towns in Italy have a day when all the shops close by law in the afternoons or all day, and it varies from town to town.
Sometimes a big guide like Fodor's will have that information for Parma and Modena. Sometimes it is on the commune website. If the blog you were reading is maintained by someone who lives in Modena, why not send them an e-mail about Parma and Modena.
Bologna's food markets are robust, outside and inside, and my recollection is that a few may even be open on Sunday (the specialty stores around the via Drapperie, etc.). It is such a food destination, it will probably be easier to find out info on the web (you can try posting on a site like Chowhound, but double check any information you get there).
Venice has its famous fish market in the Rialto, and picturesque vendors in some the canals (Dorsoduro) and campi. (Campo S. Margharita). But I would not expect anything to be open on Sundays except a few shops catering to tourists.

Weekly closing for food shops in Bologna is Thursday afternoon so I would expect that most of the shops around Via Claveture are closed then. The covered market on Via Ugo Bassi is open every morning except Sundays.
