What are your favorite local/hidden/colorful restaurants in France? (Provence, Rhone, Burgundy, Alsace)

Okay, bit of a broad question I know - but I'm looking for restaurants that really typify a region, that are filled with local color or perhaps just small and only known to locals. Holes in the wall, tiny bistros you loved, anything that was a great experience/wonderful food and ideally not too expensive.

We'll be staying in Marseille, Aix-en-Provence, Cassis, Chateauneuf-du-pape, Gigondas, Beaune, Colmar and Obernai. As you might able to guess from that, we LOVE wine. haha. But if it's a truly remarkable place you're thinking of and not in those cities, please list it anyhow - you never know! :)

So....any suggestions?

Les Abeilles in Sablet;the owners are the people who used to have l'Oustalet in Gigondas.
Chateau de Mazan
Les Florets close to Gigondas
Grand Pré near Vaison La Romaine
Clos du Patre in Caromb
Mas d'Entremont near Aix en Provence
Relais Magdelaine near Cassis
Auberge de la Loube near Buoux
Ma Cuisine in Beaune

In Strasbourg, I recommend La Mouche at 43 rue Finkwiller for its baeckeoffe. This is one of the three main Strasbourg, specialties along with sauerkraut and flammekueche.

Very near Gordes is Bernard Mathys, which was just amazing in every respect. Oh, how I hope to dine there again one day..

Actually, Stu Dudley recommended this restaurant as one of his favorites in Provence and he was so very right.

I do not believe that there is a website but there must be some google info about it.
