visit a working farm in Southern Ireland
 
My husband and I are planning a 7 day trip to Ireland in October. We want to visit a working farm. We are planning to fly into Shannon and out of Dublin. any suggestions on farms?

You do not indicate your planned itinerary but you might find something that fits your trip in this feature from the Irish Independent.
Two cautions: the list was compiled in 2010 and October is not a high season for B&B.

There are a number of B&Bs on working farms, or you can visit Rathbaun Farm near Galway.

Just make sure to clean your shoes before you board your flight back home.

Wherever home is, you will be asked if you visited any farms during your travels. If you answer yes, you will be sequestered and interrogated.

Ah, no.
We have visited farms in both England and Ireland on various trips; of course, we answered the question honestly. We have never been sequestered or interrogated. They simply want to ensure you have cleaned your walking shoes. Sometimes they might spray the bottom. No big deal. Takes an extra 2 minutes, if that.
