Could you, please, suggest a good quality restaurant in the city of Versailles ( not in the palace) and Carcassonne.

Eat in Paris after you visit Versailles. Order Cassoulet from one of the many restaurants in Carcassonne. If you want quality, eat it in Albi or Toulouse.
