two days to travel from bolzano to assisi
we will be hiking in the Bolzano area for a week and then we have two days without plans to travel from Bolzano to Assisi. We have spent time in Florence on other trips so am hoping for a good off the beaten path recommendation as we leisurely make our way south.

Assuming you're driving, you'll be passing very near Lake Garda, Verona, Mantova, Modena, and Bologna. Some of these are not really off the beaten path, but I'm not sure how far you want to get off. If you find a perfectly unspoiled hamlet in the countryside, it probably won't have any lodgings or restaurants.
A bit further south, you'll pass near San Leo, which is one of my favorites, with a castle on the top of a cliff, and a charming lower town. Even more off the beaten path is the little town of Pennabilli, on two separate hilltops (Penna and Billi). Also Mercatello sul Metauro, and Sant'Angelo in Vado, two pretty little towns in Le Marche.
The scenery near Pennabilli is spectacular.
