One of the guide books (maybe DK Guides?) has a "Lavender Map," and we followed it one day in Provence. It was incredible. Fields and fields of lavender, restaurants surving meals with lavender honey ... and lavender festivals. It was awesome!

Avatar, we may be crossing paths!
Would anyone have any insight into the below?
I am considering something similar to the OP's thoughts.. but a new wrinkle is that we also want to see at least one day of the Tour de France which means either Friday or Saturday near the end of our week in Provence.
If we view the Saturday leg, we would need to stay one night somewhere near Montelimar/Mont Ventoux (any suggestions for where to stay the night before the leg?) and if Friday then the night before would be in a village even more north.
I think I'd like to be able to spend 6 full nights in Provence before heading up to the Montelimar area to see the Tour leg... then TGV on to Paris for 4 nights. I assume viewing the Tour on Saturday (not the Mont Ventoux, I hear that would be impossible without a lot of logistics) and then hightailing it to the TGV wouldn't be a huge issue?
Many thanks...
