Tuscany Schedule - Traveling with Kids

We will be staying in a villa in Pistoia for 6 days. We would like to see the area as much as possible and will be traveling with our 2 daughters who are 10 & 12. We will have a rental car and be fairly close to the train. This is what we were thinking...

Saturday- Florence
Sunday-San Gimignano/Monteriggioni
Monday- beach day near Pisa
Tuesday- Carrara marble tour
Wednesday- hiking in Cinque Terra
Thursday- leaning tower of Pisa on our way to the airport

We want to make this as fun for our kids as possible. Am I missing out on not finding time to visit Lucca? Any and all comments suggestions are welcome.
