Turkey travel after Christmas?

We just recently finished our first and a fantastic trip to Turkey (trip report to come) - 11 days in Istanbul and Cappadocia. It was one of the best places we have visited and best trips we have made.

We are now considering going back to Turkey on or about December 25/26 for 8 days or so to visit other areas we missed and Istanbul with our 3 older children who missed this June trip.

Can anyone share any thoughts about visiting Turkey in late December/very early January? I've researched average temperatures and am familiar with them. I'm more interested in understanding the vibe that time of the year, if most things of interest and restaurants are open, etc. I'm thinking we might appreciate the thinner crowds at that time.
