Trip's all planned now except for restaurants

So the itenerary is as follows:

Nice-Hotel Les Cigales - 3 nights
Luberon - Mas Perreal - 5 nights
St. Remy - Sous Les Figuieres - 3 nights
Aix - Le Mas des Ecureuils (I was desperate- everything was full) - one night (to get close to Marseille airport.)

I'm a foodie (my first 3 trips to Paris were organized by Patricia Wells recommendations).

Some places should not be missed - these are meals you'll remember on your deathbed when all goes spinning past. I had one of those at Maxim's 20 years ago. Then one again at Joel Robuchon. ONe at Chez Julian - my first cassoulet and my first pate de fois gras d'oie. Le Bofinger- choucroute! You know the caliber.

It's taken me a lifetime to get to Provence. Please tell me the restaurants that I should not miss in these places and maybe I can get reservations.

Further, each area has a restaurant that defines it. In Austin Texas, that's Threadgills.

What are those for the areas we'll be visiting? I'm thinking maybe one big blowout meal and three representative meals. We'll wing the rest.

Whew, it's such a relief to have those hotels books. What's a sniglet for when you have the airfare and hotels boooks and only have restaurants left- almostbookedturestulous?

Looking forward to hearing your ideas and what you ate there that that was sooo special. Thanks for your ideas.

Dh and I really enjoyed Chantecleer (sp) at the Hotel Negresco in Nice.
