The journey from Pontresina to Paris via Chur (to complete the Bernina Express journey) takes 7h35 with 3 changes.>
Yes - you do not go thru St Moritz from Pontresina to get to Chur/Zurich - but you usually have to change at Samedan (sp?) and always at Chur since the track widths change there - being narrow-gauged Tirano-Pontresina to Chur - then broad gauge or standard gauge like on all European mainlines to Zurich, changing there to a TGV direct to Paris.
The changes are all easy enough though Zurich's station is rather huge and can see chaotic if not used to behemoth train sheds with a gazillion different platforms.

If taking French TGVs to Paris from Zurich be sure to book way ahead of time - not because they often sell out but because there are nifty discounts if booked far in advance to get those sold in limited number seats (I think may have restrictions on changes or refunds however so check those when booking).
