Traveling with Grandparents and kids to Paris, Germany, and Salzburg????

For anyone who's traveled to Europe with kids and around Germany/Austria by train, please, please, please give me your feedback. I have listed the itinerary below. I would love to know if I'm going to the best places for kids and to see the real Germany. Is Salzburg a good place for kids or should we go to another city? Any feedback is greatly appreciated!

I'm currently planning a trip with my husband, two kids age 6 and 9, and my in-laws.
We are planning to Paris for 4 nights and then fly to Munich and from there we will take the train to Bamberg and stay for 3 nights. While in Bamberg we may visit Wurzburg and Regensburg. Then train to Salzburg for 3 nights for Saltmine and IceCave tours. Back to Munich for 5 nights where we will hit the Technology Museum, maybe a Romantic Road tour and sight seeing.
