I don't think TSA will let you bring either a cold pack or real ice cubes through security. I have a peanut and nut allergy and would have liked to bring a sandwich with meat in in it on my transcontinental flight. But with the length of flights and layovers, I was wanting to put it on ice. Not possible.

I really think the foil pouches of salmon mentioned above are the best idea. She should check a bunch in her suitcase. And anything else she will eat that is shelf-stable.

Maybe pack a sack of potatoes in her luggage and hope her lodging choices can accommodate her? Sounds like she is refusing to branch out and try other things. Shame for her travel companions.

I feel sorry for her - and not judging her - but to go to Italy and not be able to eat pizza and gelato - must be torture. Hope all goes well.

Fortunately some gelatos are gluten free and she might find GF pizza somewhere but it will be challenging. I deal with Celiac but not an additional eating disorder and I must say it is much easier since GF became a fad diet than when my uncle was diagnosed years ago. Several cousins and a niece and nephew have it as well so we help each other when we find things we can eat. I am currently researching a trip to the UK in December and lining up possible restaurants now. I have done the same when we visit the in-laws on Kauai.

The food card in Italian will be really helpful, even so I got sick on something in our lovely lunch in Rouen last summer. Not everyone understands that gluten is not just in flour. It's the chance we take traveling. Look for signs reading "senze glutine" in Italian restaurants. The rest of the family should not be penalized because she limits her food so extremely; since she is an adult she might eat a meal on her own from time to time.

Travel medical insurance is a very good idea.
