What's wrong with microwaving the potatoes and oil to cook them? The tortilla is later cooked on the stove top in a traditional frying pan, and flipped, etc.

This is an amazing way to do it. I'll bet Ned you wouldn't even know the difference. Come to a Valencia GTG and I'll have Kenderina's Mom and I both make tortillas and tell me what you think!

I use a frittata pan and the flipping is EASY! The onion and potato are standard, of course. I put a little chorizo in it (just like my grandmother did - she used to make me one every Friday night). I am making one for dinner tomorrow night.
